This is so easy and takes me about 15 minutes to make. The great thing about this is that you can get super creative! I usually make this at the end of the week and use it as an opportunity to use veggies that are about to go bad. Sometimes, I’ll have chicken that’s leftover, or a stray bell pepper (like today) chop it up and throw it in there! There’s really no way to mess this one up. Enjoy!

Ingredients
- 1 cup quinoa
- 2 cups chicken broth
- 1 bag frozen veggies (keepin’ it easy here, people)
- 1 red bell pepper
- Garlic Salt
- Crushed Red Pepper flakes
Directions
- Cook quinoa in 2 cups chicken broth (gives it a little more flavor than water)
- Cook veggies according to package directions
- Chop bell pepper and place to the side
- When everything is finished cooking add to a large severing bowl (or tupperware if you’re looking to meal prep for the week) and season with garlic salt, and red chili flakes (feel free to get creative and add other spices, this is just what I did this week!)
- REHEAT INSTRUCTIONS
- Add a little olive oil just to add some moisture and a little more flavor and heat either on the stove for a few minutes or in the microwave for a one minute.
