Pasta Primavera

Snagged this recipe from my dad, it made a perfect Sunday night dinner!

Ingredients

  • About 4 Italian Sausages (no casing)
  • 2 TBSP olive oil
  • 2 diced onions
  • 2 cups sliced peppers (red, yellow and green)
  • 2 TBSP minced garlic
  • 1 cup cherry tomatoes (sliced in half)
  • 2 TSBP minced garlic
  • 3/4 cup chicken stock
  • 1/4 cup chopped parsley (optional)
  • 1/2 cup parmesan cheese (optional)
  • Salt and pepper to taste
  • Penne pasta

Directions

  1. Heat oil in a large saucepan over medium-high heat
  2. Cook sausage until almost browned
  3. In the same pan add peppers and onions until they soften. Add garlic and tomatoes and cook for an additional 2 minutes.
  4. Stir in flour and cook for one additional minute. Add chicken stock to the pan and bring to a simmer. Cook until the liquid has thickened (about 5 minutes)
  5. Meanwhile cook pasta according to package directions
  6. When finished add pasta to saucepan and mix together.
  7. Serve with parsley and parmesan cheese.
