Snagged this recipe from my dad, it made a perfect Sunday night dinner!
Ingredients
- About 4 Italian Sausages (no casing)
- 2 TBSP olive oil
- 2 diced onions
- 2 cups sliced peppers (red, yellow and green)
- 2 TBSP minced garlic
- 1 cup cherry tomatoes (sliced in half)
- 2 TSBP minced garlic
- 3/4 cup chicken stock
- 1/4 cup chopped parsley (optional)
- 1/2 cup parmesan cheese (optional)
- Salt and pepper to taste
- Penne pasta
Directions
- Heat oil in a large saucepan over medium-high heat
- Cook sausage until almost browned
- In the same pan add peppers and onions until they soften. Add garlic and tomatoes and cook for an additional 2 minutes.
- Stir in flour and cook for one additional minute. Add chicken stock to the pan and bring to a simmer. Cook until the liquid has thickened (about 5 minutes)
- Meanwhile cook pasta according to package directions
- When finished add pasta to saucepan and mix together.
- Serve with parsley and parmesan cheese.
